Sunday Roast Chicken
When the kids were younger, Sunday roast with Yorkshire pudding was a regular at home. It’s one of those meals that feels like more effort than it really is. I will let you into a little secret, which is that I love basting my roast with butter.

Ingredients
Whole chicken
Paprika
Lemon
Salt
Garlic
Cloves
Vegetables of your choice (leeks, onions, carrots work well)
Method
Give the chicken a good rub with paprika, lemon, salt, garlic, and cloves. Let it sit for as long as you can.
Place it in a heavy-bottomed pan with your vegetables.
Preheat the oven and roast, basting the chicken from time to time so it stays moist. Turn it once so both sides brown evenly.

Let the chicken rest for a few minutes before carving. It keeps it from drying out.
The vegetables cook in the same pan and take on all the flavour from the juices, so don’t skip them.
